Katsu Chicken Rice Bowl

Ingredients

  • 1 Cup Jasmine Rice
  • 2 tbsp Rice Wine Vinegar

Crumbed Chicken

  • 2 large Chicken Breasts Sliced thinly approx 1cm
  • 1/2 pkt Panko Breadcrumbs
  • 2 Eggs whisked
  • 1/3 cup Flour
  • Salt and pepper to taste
  • Olive Oil For frying

Vegetables

  • 1 Cucumber Chopped into batons
  • 1 Carrot Peeled and Grated
  • 1/4 Cabbage Finely shredded
  • 1/2 Cup Edamame (Frozen- shelled)
  • 1/4 Cup Pickled Ginger
  • 2 tbsp Sesame Seeds Toasted
  • Japanese Mayonnaise

Katsu Sauce

  • 1 tbsp Tomato Sauce
  • 3 tbsp Worcestershire Sauce
  • 2 tbsp Oyster Sauce
  • 1 tbsp Sugar

Instructions

Rice and Sesame Seeds

  • Prepare rice as per packet instructions.
    When rice is cooked mix through rice wine vinegar and set aside
    Toast sesame seeds in a dry pan until golden and set aside

Katsu Sauce

  • Mix together tomato sauce, Worcestershire sauce, Oyster Sauce and sugar into a bowl until sugar is dissolved. Set aside

Vegetables

  • Boil jug (for edamame).
    Prepare your vegetables. Cut cucumber into batons, peel and grate carrot and shred cabbage.
    Place edamame in a bowl and pour over boiling water. Leave to sit for approx 5 minutes, drain, run under cold water, then drain again. Set aside.

Chicken

  • Slice Chicken breasts thinly (approx 1 cm thick so they cook evenly).
  • Using 3 separate bowls, place seasoned flour, whisked eggs, and breadcrumbs. Dip each piece of chicken firstly into flour, then egg and lastly the breadcrumbs.
  • Fry crumbed chicken pieces in a large pan with a drizzle of olive oil until golden brown

To Serve

  • Place rice in bowls and top with sliced crumbed chicken and vegetables. Squeeze Mayonnaise over veges and Katsu sauce over chicken. Sprinkle with sesame seeds.

Notes

Hot Tips:
In a real hurry? - Grab a box of pre-crumbed, free-range, frozen chicken, along with a couple of pouches of  microwave rice and  your favourite Katsu sauce from your supermarket, to make it super speedy.
