Pork and Peanut Stir Fry

Ingredients
- 300 grams egg noodles
Stir Fry:
- 2 tsp sesame oil
- 500 grams pork mince
- 2 cloves garlic
- 2 tbsp ginger
- 4 cups vegetables (broccoli, snow peas, round beans, spring onions....) *
- 1 cup chicken stock
- 4 tbsp peanut butter
- 4 tbsp kecap-manis *
To Serve:
- 1 cup bean sprouts
- coriander (to taste)
- handful peanuts
- sriracha (to taste - optional)
- 2 limes
Instructions
- Put a large pot of salted water on to boil
Stir Fry:
- Mince garlic and grate ginger.
- Chop vegetables into bite sized pieces.
- Prepare stock according to packet instructions.
- Heat a large frying pan to a high heat. Add sesame oil and fry mince until browned.
- Add minced garlic and grated ginger and fry for 2 minutes.
- Add chicken stock, scraping the bottom of the pan to lift all the browned mince.
- Reduce heat to medium low. Add vegetables, cover with a lid and let steam for 5 minutes or until vegetable are tender.
- Into you large pot of boiling water, add the noodles, and cook for 5 minutes or until done.
- Remove lid and add peanut butter and kecap manis to your pan. Cook for 2 minutes stirring to combine.
- Drain noodles and divide between bowls. Top with stir fry mixture, bean sprouts, peanuts and coriander leaves then squeeze over juice of one lime. Serve with extra lime wedges and sriracha if desired!

Cooks Notes:
* You can use any combination of seasonal vegetables. This is a great recipe for using up extras in the fridge!
*If you don't have kecap manis, you can substitute with 2 tbsp brown sugar and 2 tbsp soy sauce.
