Pork, Avocado & Apple Slaw Burger

Ingredients

To Assemble:

  • 4 Burger Buns (Ciabatta or Brioche are perfect!)
  • 1 avocado
  • squeeze lemon or lime juice
  • salt & pepper to taste
  • 1 bag slaw (undressed)
  • 1 small apple
  • cup mayonnaise
  • 1 tbsp sriracha
  • sweet chilli sauce or chilli jam (to taste)

Pork:

  • 350 - 400 grams pork steaks (or chops - remove meat when cooked)
  • ¼ cup BBQ sauce
  • salt & pepper (to taste)
  • 1 tbsp neutral oil (for cooking)

Instructions

Method:

  • Season the pork and coat will with the BBQ sauce. Set aside in the fridge anywhere from 30 minutes to 24 hours.
  • Smash the avocado, add lemon or lime juice to taste and season with salt & pepper. Set aside.
  • Combine the mayonnaise and sriracha. Set aside.
  • In a large pan heat the oil and cook the steaks approx 3 minutes each side or until cooked. Remove from pan and leave to rest for a few minutes.
  • Lightly toast the buns (or leave fresh!)
  • Grate the apple and add to 1½ - 2 cups of the slaw.
  • Cut the pork into thin slices.
  • Layer the bun bases with: Avocado, slaw, sriracha mayo mix, pork, and sweet chilli sauce or chilli jam - add bun top and enjoy!
