Traditional Caesar Salad

Ingredients

Salad:

  • 1 large cos lettuce (or 2 hearty large baby cos)
  • 3 - 4 slices sour dough (toast sliced) or bread of choice
  • ¾ cup Parmesan + shavings to serve *
  • 4 - 8 eggs (or quantity of choice)*

Dressing:

  • 1 clove garlic (small)
  • 2 tbsp red wine vinegar
  • ½ cup olive oil
  • 1 tbsp Dijon mustard
  • ½ tsp freshly ground pepper
  • ½ tsp oregano
  • 2 - 3 anchovy fillets
  • 1 egg

Instructions

Eggs:

  • In a large pot, bring to the boil enough salted water to cover the eggs completely. While waiting for water to boil, make an ice bath of cold water and ice in a bowl, ready to add the eggs once cooked.
  • Gently add the eggs to the boiling water. Once the water comes back to the boil, set the timer for 7 minutes *.
  • When the eggs are done, place into the ice bath and leave to cool - at least 15 minutes. Then peel - this is easier under cold running water!

Salad:

  • Wash, shake out, and either cut, or tear the lettuce into decent 'bite' sized pieces. Set aside.
  • Put the bread into the toaster. Once toasted leave to let it cool.
  • Grate the Parmesan and set aside.

Dressing:

  • If using a stick blender, put all dressing ingredients into the jug - garlic, wine vinegar, oil, mustard, pepper, oregano, anchovies, and egg - and blend. (This makes a creamy dressing).
  • If using a whisk, crush garlic, mash anchovy fillets, and beat egg.
  • Add all other ingredients and whisk together. (This makes a chunkier dressing).

Salad assembly:

  • On a chopping board, cut toast into squares.
  • Place lettuce on a large platter or in a large bowl. Gently toss through the dressing*. Sprinkle over the Parmesan and toast adding all the crumbs from the board as well. Cut eggs in half and nestle into the salad. Add Parmesan shavings* on the top if desired.

Notes

*Use a potato peeler to make shavings.
*If using size 7 or large eggs boil for 8 minutes.
*The dressing is a generous amount and is more than needed for a serving for 4.  To increase the number of servings add more lettuce, eggs, Parmesan, toast/croutons!
